Making Nigerian Rice and Stew



Here's a simple recipe to make delicious Nigerian rice and stew:


Ingredients:

For the Stew:

- 2 cups of chopped tomatoes (fresh or canned)

- 1 large onion, chopped

- 2-3 Scotch bonnet peppers (or substitute with habanero), chopped

- 2 cloves of garlic, minced

- 1 teaspoon of ground ginger

- 1 teaspoon of ground cumin

- 1 teaspoon of paprika (optional)

- Salt and black pepper, to taste

- 2-3 tablespoons of vegetable oil

- 1 pound of beef, chicken, or fish (optional), cut into bite-sized pieces

- 2 cups of beef or chicken broth (optional)


For the Rice:

- 2 cups of long-grain rice

- 4 cups of water

- Salt, to taste


Instructions:

Prepare the Stew:

1. Sauté Onions: Heat oil in a large pot over medium heat. Add the chopped onions and sauté until translucent.

2. Add Garlic and Ginger: Add the minced garlic and grated ginger, sautéing for another minute.

3. Add Tomatoes and Peppers: Add the chopped tomatoes and Scotch bonnet peppers. Cook until the tomatoes break down and the mixture thickens.

4. Add Meat or Fish: If using, add the meat or fish and cook until browned.

5. Season: Add cumin, paprika, salt, and black pepper. Stir well.

6. Simmer: Add broth if desired and let the stew simmer for 20-30 minutes, adjusting seasoning as needed.


Cook The Rice:

1. Rinse Rice: Rinse the rice under cold water until the water runs clear.

2. Boil Water: In a large pot, bring 4 cups of water to a boil.

3. Add Rice: Add the rinsed rice and salt to taste.

4. Cook: Reduce heat to low, cover, and cook until the water is absorbed and the rice is tender (about 15-20 minutes).

5. Fluff: Once cooked, fluff the rice with a fork.


Serve:
